Happy WIAW chaps and chapesses. My photos aren't fantastic this week I apologise, I've been a wee bit busy the last few days. This week's selection of eats is from Monday.
Breakfast was a standard bowl of oats, which I had with unsweetened almond milk, banana, pumpkin seeds and honey.
As February's WIAW them is Love your Veggies Month, I thought I'd talk a little bit about my favourite ways of eating them this week.

One of my favourite ways of eating veg is salads - crunchy and crisp leaves and veggies, yummy!
On Monday I had a turkey salad with greens, carrots and green peppers. I love peppers, they are my favourite veg. I find them incredibly versatile in salads, soups, stews, chillis, pasta dishes, you name it I can probably find a way of putting peppers in them. Stuffed peppers are absolutely Delicious with rice or cous cous, lots of herbs and spices and some beans.
Another way I love eating veggies is making soups with them. I had a vegetable soup as part of my lunch on Monday, although this was not a homemade one.
I love soups and salads as a combo. I try not to eat too much bread, as it bloats me, and there is the odd occasion where I dunk a slice in a bowl of soup, but to keep me satisfied at meals, I've been eating soups and salads.
Afternoon snackage was a hazelnut yogurt. I usually eat no added sugar natural or Greek yogurts, but when I was doing my weekly shop I fancied some flavoured ones. I was looking at the labels of a lot of them and they were full of refined sugars or artificial sweeteners. I came across the Longley Farm range which are sweetened with unrefined cane sugar.
It was gorgeous, slightly sour creamy natural yogurt with a bite from the hazlenuts.
Stirfries are another way I love getting in my five a day. They're quick, easy and are a great way of using leftover veggies. I had a chicken and cashew stirfry with rice noodles.
In the evening I munched on a bag of the delicious smooth and rich Beyond Dark chocolate drops while I was picking the winners of my giveaway. But I forgot to take a pic. This is what they look like...

ReplyDeleteI love using veggies in soups too. They are so satisfying and comforting for me. I generally try to make a ginormous batch so I can eat some right away and then freeze some for later. Love the addition of cashews to your stir fry.
