While I'm getting settled in to my new job and home in Scotland, I thought I'd do something different for this week's WIAW and leave you an ice cream recipe - a healthy yummy ice cream that contains chocolate. I also baked you a cake to make up for my disappearance. What more could you want?
You will need...
1 large frozen banana
1/2 cup frozen cherries, pitted
1 tbsp dark chocolate chips
1 tbsp unsweetened almond milk
1 whole fresh cherry to garnish
I scream, you scream, we all scream for ice cream...
As you take your banana and cherries out of the freezer, chill your dish of choice in the freezer. Add the banana to a blender, I find it best to put it on a slow speed to start, then speed it up as the banana becomes creamier. As the banana starts to blend, add half the cherries and the milk, as they begin to come together, add the rest of the cherries and turn the speed up. Once the cherries and bananas have mixed together, turning the mixture pink, add the chocolate chips and blend for a couple of more minutes. Serve in your favourite dish or a teacup for a cute retro twist.
By using both frozen banana and cherry I got a glorious mini mound of guilt free ice cream. It was fruity but not sickly with a regular crunch and bittersweet blast from the dark chocolate. Pure bliss. Chocolate and cherry is such a gorgeous combination. After seeing many recipes by Shell @ Peachy Palate using the two ingredients, I think cherry and choc was on my mind.
I don't even need real ice cream anymore, just give me a frozen banana and a blender and I'm good to go.
