I slept in and wanted to stay curled up in my bed. The weather is getting colder, and my bed is becoming increasingly more appealing on a morning.
I took an extra horse riding lesson last week and complied with a long week at work, I was pretty tired and achy on Saturday. A big bowl of oats was the perfect breakfast.
Creamy chia seed and cinnamon oats with walnuts and bananas mixed in, topped with warmed berries and maple syrup. It doesn't get much better than that for me.
I made James a bowl as well, which he happily chomped away at. He didn't even notice the chia seeds. Healthy extras for the win.
He said the berry juice oozing on top of the oats made it look like a brain, and that I had to tell you guys that.
For lunch, I made an onion and cherry tomato omelette. Usually when I'm making an omelette which is going to end up on a WIAW post, it is a disaster, more like a splat than a neat fold. A splatlette. I make omelettes regularly and they flip beautifully, but as soon as I decided to photograph it, fail. But this time, it flipped perfectly in half. Nikki 1. Omelettes 0.
I stuffed the omelette with avocado.
Such. A. Good. Decision.

The raspberries and strawberries here in Scotland are some of the best I've had, not only this year, but full stop. Big, fat and juicy.
In the evening, I cooked some turkey steaks in Jamaican jerk spice, which James had picked up in the supermarket, and coconut oil. So tender, succulent and flavoursome. James said the turkey was the dog's b******s. He really did say that.
I served it with some baked sweet potato fries, steamed broccoli and spinach, and mushrooms, which I started in the oven, but finished off in the pan the turkey had been cooked in to soak up all the flavour.
James doesn't like broccoli, spinach or mushrooms, so he had a salad on the side. I still saw that as a win for a healthy meal for him though.
